- 1 c. sugar
- 2 large eggs
- 1/2 c. unsifted all-purpose flour
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 4 Tbsp. unsalted butter, melted
- 1 1/2 tsp. vanilla extract
- 1 (14 oz.) bag sweetened flaked coconut
- 40 Hershey's Solitaire cake
Directions

1Preheat oven to 325°.

2Grease 2 large baking sheets.

3Mix sugar and eggs at high speed.

4Add flour, baking powder and salt; beat until blended.

5Beat in butter and vanilla.

6Stir in coconut. Drop dough with tablespoon onto baking sheets.

7Shape into balls.

8Press 1 Solitaire candy into each cookie.

9Bake 15 to 18 minutes or until firm and coconut browns.

10Let cool.
