Souffleed Rice Casserole

  • 2 Tbsp. butter
  • 3 or 4 green onions (white part only), thinly sliced
  • 2 c. cooked rice
  • 1/4 c. minced parsley
  • 2 egg yolks, slightly beaten
  • 1/4 c. milk
  • 1/2 c. grated Parmesan cheese (1 1/2 oz.)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 egg whites
