  • 2 c. water
  • 3 c. fresh broccoli florets
  • 1 c. diced carrots
  • 1/2 c. chopped onion
  • 1 c. coarsely chopped fresh cauliflower
  • 1/4 tsp. salt
  • 1/4 tsp. dry mustard
  • 1/4 tsp. dried dillweed
  • 1/8 tsp. pepper
  • 1 c. skim milk
  • 3/4 c. (3 oz.) shredded low-fat Cheddar cheese
  • 1/2 c. diced yellow squash

Directions

    Bring water to a boil in large saucepan; add 2 cups of the broccoli, 1/2 cup carrots and onion.

    Cover, reduce heat and simmer 15 minutes or until vegetables are tender.
