- 4 cups pitted sour cherries, with their juice
- 4 tablespoons sugar
- 1/2 cup all-purpose flour
- 1/4 cup whole-wheat flour
- 13 cup light brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 6 tablespoons cold unsalted butter, cut in pieces
- 1/4 cup chopped walnuts
- 1/4 cup rolled oats
Directions

1Preheat oven to 375 degrees.

2Combine the cherries and the sugar and let stand for 10 minutes.

3Place in a sieve and let drain very well.

4Place in a 9-inch pie plate and set aside.

5In a medium-size bowl, combine the all-purpose and whole-wheat flours, sugar, salt and cinnamon.

6Rub in the butter until the mixture resembles coarse meal.

7Add the walnuts and oats and toss lightly to combine.

8Cover the cherries with the topping and bake until the topping is crisp and the juices are bubbling, about 40 minutes.

9Place on a rack to cool slightly before servings.
