Sourdough Bread Starter

- 1/2 c. instant potatoes
- 2 c. warm water
- 1/2 c. sugar
- 2 tsp. salt
- 1 pkg. yeast
Directions

1Dissolve yeast in 1/2 cup of water, add remaining ingredients and stir well.

2Keep at room temperature for 24 hours.

3Take out and feed with 3/4 cup sugar, 3 tablespoons instant potatoes and 1 cup warm water. Mix well and add to starter.

4Let stand at room temperature for 8 to 12 hours (mixture will be bubbly).

5Take out 1 cup to make bread and return rest to refrigerator.

6Keep in refrigerator for 3 to 5 days, then feed again.

7If not making bread after feeding starter, throw away 1 cup.

8(This is to avoid deflating starter.)
