- 2 tablespoons unsalted butter
- 1/4 cup onion, minced
- 2 tablespoons curry powder
- 3 tablespoons flour
- 3/4 teaspoon salt
- 1 teaspoon brown sugar
- 1/2 teaspoon fresh ginger, minced
- 1 cup chicken broth
- 1 cup 2% low-fat milk
- 1 lb skinless chicken breast, diced
- 1/2 teaspoon lemon juice
Directions

1In a saucepan, melt butter and saute onion with curry over low heat.

2Blend in flour, salt, brown sugar, ginger, and chicken. Keep cooking for 5 minutes, stirring constantly.

3Add broth, stir and bring to a boil. Cover, and simmer over low heat for 15 minutes.

4Add milk and lemon juice, and stir constantly for 1 minute, or until warm & ready to serve.
