  • 1 c. cornmeal
  • 2 heaping Tbsp. flour
  • 1 c. buttermilk
  • 1 egg
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • bacon drippings to season
  • greased skillet

Directions

    Combine buttermilk, egg, cornmeal, flour, soda, baking powder and salt.

    Mix well, then add 3 to 4 tablespoons bacon drippings. Pour into a very hot well-greased iron skillet.

    Bake at 450° for 20 to 25 minutes, until brown.
