Ingredients
- 1 c. sifted flour
- 3/4 tsp. baking soda
- 1 tsp. salt
- 1 tsp. baking powder
- 1 c. yellow cornmeal
- 1/4 c. oil
- 2 Tbsp. light brown sugar
- 2 eggs, well beaten
- 1 1/2 c. buttermilk
- 2 Tbsp. bacon drippings or oil
Directions

1Heat oven to 435°.

2Sift first 4 ingredients in medium mixing bowl.

3Add cornmeal.

4Combine 1/4 cup oil, brown sugar and eggs. Add buttermilk to this and then combine with dry ingredients. Beat only until smooth.

5Cover bottom of 10-inch cast-iron skillet with bacon drippings.

6Heat on top of stove until very hot.

7Pour batter in skillet.

8Immediately put in oven.

9Bake 25 to 30 minutes.

10Remove from skillet so that crust is on top.

11(This is good to use in any cornbread dressing.)
