- 4 Tbsp. bacon drippings
- 1 1/2 c. white corn meal
- 1/2 c. flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 2 eggs, beaten
- 1 c. buttermilk
Directions

1Preheat oven to 425°.

2Melt bacon drippings in a 9-inch cast-iron skillet in the oven.

3Combine corn meal, flour, baking powder, salt and soda.

4Whisk eggs into buttermilk; add to the corn meal mixture, stirring just until blended.

5Pour hot drippings from skillet into batter; blend well.

6Pour batter into hot skillet.

7Bake for 20 to 25 minutes or until cornbread is golden brown.

8Cut into wedges to serve.
