Pineapple Cheese Cake

  • 24 crushed graham crackers
  • 1/2 c. melted margarine
  • 1/4 c. granulated sugar
  • 1 (7 oz.) box lemon jello
  • 1 c. boiling water
  • 1 (8 oz.) pkg. softened cream cheese
  • 1 c. granulated sugar
  • 1 large can drained crushed pineapple
  • 1 can chilled evaporated milk

Directions

    Mix first three ingredients together, reserving 1/2 cup. Press remainder in 9 x 13-inch pan.

    Mix together jello and water and chill until slightly set.

    Mix together softened cream cheese, sugar and pineapple and add to jello mixture.

    Whip 1 can chilled evaporated milk.

    Fold cheese and jello mixture into the whipped milk.

    Pour into crust and sprinkle with remaining graham crumbs. Chill several hours.
