Ingredients
- 2 c. sliced fresh okra (1/2 in. thick)
- 1 Tbsp. sugar
- 1 tsp. all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. vegetable oil
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 3 medium tomatoes, peeled and chopped
- Hot cooked rice, optional
Directions

1Place okra in a saucepan, add 1 in. of water.

2Bring to a boil. Reduce heat, cover and simmer for 8-10 minutes or until tender. Drain and set aside.

3Combine the next four ingredients, set aside. In a skillet, heat oil over medium heat.

4Saute onion and green pepper until tender.

5Stir in sugar mixture and tomatoes, cook for 5 minutes.

6Add okra and simmer until heated through, stirring as little as possible.

7Serve with rice if desired.
