Southern Peach Pie

  • 1 unbaked 8-inch pastry shell
  • 1 (29 oz.) can cling peach slices, well drained
  • 28 caramels
  • 1/4 c. butter
  • 3/4 c. sugar
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
  • 2 eggs
  • 1 c. nuts, chopped
  • whipping cream, whipped (optional)

Directions

    Melt caramels and butter in double boiler, stirring until smooth.

    Combine sugar, salt, vanilla and eggs.

    Gradually mix in caramel sauce and nuts.

    Turn peach slices into unbaked pie shell and cover with caramel mixture.

    Bake 40 to 50 minutes in a 350° oven.

    Filling will firm as it cools.

    Serve with whipped cream if desired.
