  • 1 lb. red beans (dry)
  • 1 lb. sausage (or ham), cut up
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 3 to 4 cloves garlic, minced
  • salt and pepper to taste
  • 2 Tbsp. flour
  • 1/4 to 1/2 c. cooking oil
  • 3 to 4 c. water

    Sort and wash red beans.

    Add cut sausage, onion, bell pepper, garlic, salt and pepper.

    Make your roux in a separate pan.

    Roux is made by browning flour in cooking oil.

    Pour roux over other ingredients (bean and sausage mixture) to thicken the liquid in the pot. Cook until beans are done.
