- 1 lb. red beans (dry)
- 1 lb. sausage (or ham), cut up
- 1 large onion, chopped
- 1 bell pepper, chopped
- 3 to 4 cloves garlic, minced
- salt and pepper to taste
- 2 Tbsp. flour
- 1/4 to 1/2 c. cooking oil
- 3 to 4 c. water
Directions

1Sort and wash red beans.

2Add cut sausage, onion, bell pepper, garlic, salt and pepper.

3Make your roux in a separate pan.

4Roux is made by browning flour in cooking oil.

5Pour roux over other ingredients (bean and sausage mixture) to thicken the liquid in the pot. Cook until beans are done.
