- 2 Tbsp. butter
- 2 fresh sage leaves, minced
- 6 sole filets
- 2 Tbsp. mandarin peel
- 2 tsp. lemon juice
- 1 tsp. fresh parsley, minced
Directions

1Melt butter over low heat in large skillet, add fish, turning so each piece is well buttered.

2Salt and pepper to taste, cover pan tightly and cook over very low heat until fish flakes easily, 6 to 8 minutes.

3Remove to a heated platter and keep warm while preparing sauce.
