  • 1 c. sifted all-purpose flour
  • 1 c. yellow corn meal
  • 1/4 c. sugar
  • 3/4 tsp. salt
  • 4 tsp. baking powder
  • 2 eggs
  • 1 c. milk
  • 1/4 c. soft shortening or salad oil

Directions

    Preheat oven to 425°.

    Mix flour with corn meal, sugar, salt and baking powder.

    Mix eggs, milk and shortening.

    Mix with dry ingredients until smooth.

    Pour into a 9 x 9 x 2-inch pan or a 10-inch skillet.
