  • 1 c. uncooked brown rice
  • 1/3 c. uncooked wild rice
  • 4 (16 oz.) cans diced tomatoes with green chilies, drained
  • 1 red bell pepper, diced
  • 1 yellow onion, finely chopped
  • 2 cloves garlic, finely chopped
  • green tops from 1 bunch onions, chopped fine
  • 1 can corn, drained
  • 1 to 1 1/2 tsp. cayenne pepper
  • 2 tsp. cumin
  • salt and freshly ground pepper
  • grated Monterey Jack and sharp Cheddar cheese
