Southwestern Bean Soup

Ingredients

  • 1 lb dry black beans, washed
  • 6 cups beef broth or 6 cups beef bouillon
  • 1 large onion, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 garlic clove, crush
  • 1 teaspoon ground cumin
  • 1 teaspoon ground oregano
  • 1 teaspoon ground thyme
  • 2 ham hocks
  • 1 large tomatoes, diced
  • 13 cup sour cream

Directions

    In crockpot combine All ingredients except sour cream and chopped tomato.

    Cook on low about 10 hours or till beans are done.

    Remove the hocks; cool and remove lean part of meat, discarding fat and bones.

    Return lean part of meat to crockpot and reheat if needed.

    Serve topped with sour cream and diced tomato.
