Ingredients

  • 2 medium onions, chopped
  • 2 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 1 can whole tomatoes with juice
  • 1 can tomato sauce
  • 1 can chopped mild green chilies
  • 3 Tbsp. chili powder
  • 1 Tbsp. cumin
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 lb. lasagna noodles
  • 3/4 c. grated Parmesan cheese
  • 1 lb. cottage cheese, preferably small curd

Directions

    In a medium saucepan, combine the oil, onions and garlic. Cook over medium-high heat for 5 minutes.

    Add tomatoes and their juice, tomato sauce, green chilies, chili powder, cumin, salt and pepper.

    Bring the mixture to a simmer over medium heat.

    Reduce heat to medium-low and simmer, uncovered, for 35 minutes, stirring occasionally.
