Soy Fried Rice

- 2 Tbsp. cooking oil (peanut or Mazola)
- 3 eggs, beaten
- 1 bunch green onions and tops, sliced
- 1 (14 oz.) box Minute rice, cooked as directed or 1 c. regular rice, cooked and drained
- 2 Tbsp. soy sauce
- 1 c. cooked diced shrimp or 1 c. cooked diced pork tenderloin (optional)
Directions

1Heat oil; add eggs, mixing constantly while breaking up with fork.

2Add eggs and onions to rice with soy sauce to color rice brown.

3Blend very well and serve hot.

4(Can be reheated in oven at 350° for 30 minutes.)

5If desired, stir in 1 cup cooked, diced shrimp or 1 cup cooked, diced pork tenderloin.
