  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup packed light-brown sugar
  • 2 tbsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 large egs, separated, room temp
  • 2 cups soymilk (can use up to 1/2 cup of almond milk)
  • 1 tsp pure vanilla extract
