  • 1 medium onion, sliced
  • 1 garlic clove, chopped
  • 1 (4 ounce) can mushrooms, drained
  • 2 tablespoons salad oil
  • 3 lbs frying chicken, cut up or 3 lbs chicken breasts
  • flour (for dredging)
  • 14 cup soy sauce
  • 14 cup catsup
  • 14 cup white wine
  • 14 cup sliced pitted black olives (optional)

Directions

    Cook onions, garlic and mushrooms in oil until onion is soft.

    Using a slotted spoon, transfer them to a buttered 3-quart casserole.

    Dredge chicken in flour.

    Brown chicken in same skillet, adding more oil if necessary.

    Transfer pieces to casserole.

    Mix soy sauce, catsup, and wine.

    Pour over chicken.
