Soya Bean Pate

Ingredients
- 1 cup soybeans (daizu) soaked
- 1 medium onions chopped
- 1 tablespoon olive oil
- 2 tablespoons tomato paste
- 2 tablespoons black olives pitted, chopped
- 2 tablespoons parsley leaves chopped
- 1 pinch salt
- 1 tablespoon sesame seeds toasted
Directions

1Drain the beans, cover with fresh water and bring to a boil.

2Boil hard for 10 minutes, reduce heat, cover and simmer until tender, about 2 hours, depending on the age of the beans.

3Drain and set aside.

4When cooled, mash.

5Heat olive oil and saute the onions until very soft, 10 minutes.

6Add to the mashed soya beans.

7Stir in the tomato paste, olives, parsley, salt if necessary (remember that the olives already add a salty flavour to the rest of the ingredients) and sesame seeds.

8Spoon into a serving dish and chill for at least 30 minutes before serving.

9Serve with crackers or toast sliced into fingers.
