- 4 Tbsp. cooking oil
- 1 onion, medium size
- 2 tsp. salt
- 2 garlic cloves
- 1 tsp. sugar
- 1/4 tsp. black pepper
- 2 cans (15 oz.) tomato paste
- 5 cans water
- 1 qt. tomato juice
- 1/4 c. fresh parsley
- a few chopped celery leaves
- 1 California orange rind
Directions

1Fry chopped onion, garlic, parsley and celery leaves until onions are a good golden brown.

2Add tomato paste and continue cooking 5 minutes, stirring constantly to prevent sticking and make a roux.

3Add water and tomato juice and stir until completely blended.

4Add salt, sugar and pepper and continue cooking for 1/2 hour.
