Ingredients

  • 4 Tbsp. cooking oil
  • 1 onion, medium size
  • 2 tsp. salt
  • 2 garlic cloves
  • 1 tsp. sugar
  • 1/4 tsp. black pepper
  • 2 cans (15 oz.) tomato paste
  • 5 cans water
  • 1 qt. tomato juice
  • 1/4 c. fresh parsley
  • a few chopped celery leaves
  • 1 California orange rind

Directions

    Fry chopped onion, garlic, parsley and celery leaves until onions are a good golden brown.

    Add tomato paste and continue cooking 5 minutes, stirring constantly to prevent sticking and make a roux.

    Add water and tomato juice and stir until completely blended.

    Add salt, sugar and pepper and continue cooking for 1/2 hour.
