- 1 spaghetti squash, halved and seeded
- 1/3 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter
- salt and ground black pepper to taste
- 1/2 cup sour cream, divided (optional)
Directions

1Preheat oven to 350 degrees F (175 degrees C).

2Coat a baking sheet with cooking spray.

3Place spaghetti squash onto prepared baking sheet with cut sides down.

4Bake until squash is tender, about 45 minutes.

5Scrape strands of flesh from the squash with a fork and place in a large bowl.

6Mix flour and Parmesan cheese into squash strands.

7Melt butter in a skillet over medium-high heat.

8Spoon 1/4 cup of the spaghetti squash mixture into the skillet and pat and press to form squash into a patty about 1 inch thick.

9Cook until golden brown, about 5 minutes per side.

10Season with salt and black pepper to taste.

11Serve patties topped with a dollop of sour cream.
