Spaghetti With Tuna

- 12 ounces spaghetti
- 2 tablespoons extra virgin olive oil
- 1 sweet red pepper, chopped
- 4 garlic cloves, minced
- 12 ounces solid white tuna, drained
- 2 tablespoons capers
- 14 teaspoon salt
- 14 teaspoon ground black pepper
- 1 pinch hot pepper flakes
- 14 cup fresh parsley, chopped
Directions

1In a large pot of boiling salted water, cook the pasta for 8 to 10 minutes or until tender but firm.

2Drain and return to the pot, reserving 1/2 cup cooking liquid.

3Meanwhile, in a non-stick skillet, heat the oil over medium heat.

4Cook the red pepper and garlic for 30 seconds until fragrant.

5Add the tuna, breaking into chunks.

6Add the capers, salt, pepper and hot pepper flakes.

7Cook for 2 minutes or until hot.

8Add the cooking liquid.

9Toss with the pasta and sprinkle with parsley.
