  • 1 tablespoon vegetable oil
  • 4 boneless skinless chicken breasts (about 1 lb)
  • 2/3 cup long grain brown rice
  • 1 1/2 cups fat free chicken broth
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon sugar
  • 1/4 teaspoon cayenne pepper
  • 1 medium onion, chopped (about 1/2 cup)
  • 2 garlic cloves, finely chopped
  • 1 (14 1/2 ounce) can stewed tomatoes
  • 1/2 cup monterey jack cheese, shredded (2 ounces)

Directions

    Heat oil in 10-inch skillet over medium heat.

    Cook chicken in oil 8 - 10 minutes, turning once, until light brown.

    Drain fat from skillet.

    Stir remaining ingredients except cheese into skillet with chicken.

    Heat to boiling; reduce heat.

    Cover and simmer 50 - 55 minutes, stirring occasionally, until rice is tender.
