- 1 large onion
- 2 c. peeled and chopped tomatoes
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 Tbsp. light brown sugar
- 2 c. cooked long grain rice
- 1/2 tsp. garlic
Directions

1Cook onion and eggplant in butter until tender.
