  • 1 12 lbs . ground turkey
  • 1 teaspoon salt
  • 2 onions, finely chopped, divided
  • 2 garlic cloves, minced, divided
  • 1 tablespoon paprika
  • 1 cup roasted red pepper, chopped, divided
  • 12 cup breadcrumbs
  • 2 tablespoons parsley, chopped
  • 1 egg
  • 1 tablespoon olive oil
  • 1 (454 g) can diced tomatoes
  • 4 cups tomato juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • 2 cups basmati rice
  • 6 saffron threads

Directions

    In a large bowl, combine turkey, salt , half the chopped onions, half the garlic, paprika, 1/2 cup roasted red peppers, breadcrumbs, parsley and egg.

    Mix turkey until well combined and set aside.

    In a large pot on medium, heat oil and saute remaining onions until transparent.

    Add all remaining ingredients and bring to a simmer.

    With slightly damp hands, form turkey mixture into meatballs, approximately 2 tablespoons in size.

    Gently drop meatballs into simmering sauce until all the turkey mixture is finished.

    Cover pot and let simmer on low for 1 hour or until meatballs ore cooked through.

    TO MAKE RICE:.

    Follow package directions, adding saffron threads to water.
