- 3 lb. potato slices
- 3/4 c. chorizo
- 1/2 c. cooking ham in pieces
- 4 strips bacon, fried and cut
- 1/3 c. peas
- 2 roasted peppers
- 1 large onion, sliced
- 6 eggs, beaten
- 2 tsp. salt
Directions

1Fry potatoes in oil; once fried, drain them.

2Saute onion and add to potatoes.

3Heat chorizo in a pan in the bacon grease, adding to them the potatoes, peas, peppers and eggs, beaten with salt.

4Mix everything.

5In a double frying pan, add 3 to 4 tablespoons olive oil; add mixture for a few minutes.

6Put on lid; turn the omelet with large plate and add another 3 to 4 tablespoons oil and turn over omelet.

7Cook another few minutes.
