Spanish Omelet

  • 3 lb. potato slices
  • 3/4 c. chorizo
  • 1/2 c. cooking ham in pieces
  • 4 strips bacon, fried and cut
  • 1/3 c. peas
  • 2 roasted peppers
  • 1 large onion, sliced
  • 6 eggs, beaten
  • 2 tsp. salt

Directions

    Fry potatoes in oil; once fried, drain them.

    Saute onion and add to potatoes.

    Heat chorizo in a pan in the bacon grease, adding to them the potatoes, peas, peppers and eggs, beaten with salt.

    Mix everything.

    In a double frying pan, add 3 to 4 tablespoons olive oil; add mixture for a few minutes.

    Put on lid; turn the omelet with large plate and add another 3 to 4 tablespoons oil and turn over omelet.

    Cook another few minutes.
