- 2 tablespoons vegetable oil
- 1 onion, chopped
- 225 g cooked potatoes, cubed
- 12 green bell pepper, chopped
- 4 eggs, beaten
- salt and pepper
- 1 teaspoon dried parsley
- 100 g cheddar cheese, grated
Directions

1Heat the oil in a frying pan and saute the onion for 3-5 minutes Add the potatoes and pepper and cook for 5 mins, stirring occasionally.

2Season the eggs with salt and pepper and stir in the parsley.

3Pour over the vegetable mixture and cook for 2-3 mins until the base is set.

4Sprinkle over the cheese and place under a grill for 3-4 mins until golden brown.

5Serve in wedges.
