  • 800g potatoes, diced into 2cm cubes Safeway 2 pkg For $5.00 thru 02/09
  • 9 eggs
  • 1 1/2 teaspoons smoked paprika
  • salt and pepper, to taste
  • 2 teaspoons oil
  • 1 large red onion, sliced
  • 2 large roasted red capsicum fillets, sliced
  • 1/2 cup flat-leaf parsley, roughly chopped
  • 6 KRAFT Singles Target 2 For $5.00 thru 02/06
  • rocket leaves, to serve
  • cherry tomatoes, sliced in half, to serve

Directions

    Place potato in a large microwave-safe bowl and cook on HIGH (100%) for 6-7 minutes until just tender.

    Whisk together the eggs, paprika and seasonings.

    Heat the oil in a 26cm frying pan over medium heat.

    Add the onion and saute.

    Add 1/2 the potato, capsicum and parsley to the pan and pour over 1/2 the egg mixture.

    Top with the Singles*, then the remaining potato, capsicum and parsley.

    Pour over remaining egg mixture.

    Cook, uncovered, over medium-low heat for 8-10 minutes or until base of omelette is browned and filling is almost set.

    Place pan under a hot grill for 5-8 minutes until top is set.

    Slice and serve with rocket and tomatoes.
