Spanish Pork Chops

  • 5 pork chops
  • 1 Tbsp. fat
  • 1 sliced onion
  • 2 c. can tomatoes
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 Tbsp. flour
  • 3 c. rice

Directions

    Brown chops on both sides.

    Brown onions in the same skillet. Add tomatoes and seasoning.

    Cover and simmer 2 hours.

    Remove meat and thicken tomato mixture with flour to a smooth paste with 1/4 cup cold water.

    Boil 2 to 3 minutes, stirring.

    Place already cooked rice in center of platter.

    Arrange chops around it and pour tomato sauce over all.
