Spanish Potato Omelet

- 6 small potatoes
- 3 medium onions
- 6 to 8 oz. smoked ham
- oil
- 12 eggs
- salt and pepper to taste
Directions

1Slice potatoes, onions and ham with thinnest slicing disk of food processor.

2(If you don't have food processor, slice as thinly as possible by hand.)

3Saute potatoes and onions in oil until soft, but not brown.

4Butter an 11 3/4 x 7 1/2-inch glass baking dish. Layer potatoes, onions and ham in dish.

5Scramble eggs with salt and pepper to taste and pour over all.

6Bake at 325° for 20 to 25 minutes, or until eggs are set.

7Cut into squares.

8Serves 6.
