Ingredients

  • 2 Tbsp. shortening
  • 1 c. uncooked rice
  • 1 small onion, chopped
  • 1 can tomatoes
  • 4 c. water
  • 1/2 green pepper, chopped
  • salt and pepper

Directions

    Melt shortening in iron frying pan.

    Add rice and stir until golden brown.

    Remove from heat.

    Add remaining ingredients and mix well.

    Cover and simmer over low heat for 30 minutes or until rice is tender and has absorbed water and juices.

    Keep tightly covered until ready to serve.
