- 2 Tbsp. shortening
- 1 c. uncooked rice
- 1 small onion, chopped
- 1 can tomatoes
- 4 c. water
- 1/2 green pepper, chopped
- salt and pepper
Directions

1Melt shortening in iron frying pan.

2Add rice and stir until golden brown.

3Remove from heat.

4Add remaining ingredients and mix well.

5Cover and simmer over low heat for 30 minutes or until rice is tender and has absorbed water and juices.

6Keep tightly covered until ready to serve.
