Spanish Rice

  • 1/2 c. raw white rice, washed
  • 1 c. sliced, peeled onions
  • 2 Tbsp. butter, margarine or oil
  • 2 1/3 c. canned tomatoes
  • 1 1/8 tsp. salt
  • 3 Tbsp. diced green pepper
  • 2 whole cloves
  • 1 small bay leaf
  • 2 Tbsp. granulated sugar

    Cook the rice until tender (about 45 minutes).

    Meanwhile, cook the sliced onions in the butter until tender.

    ingredients and simmer, uncovered, for 15 minutes. Remove bay leaf and cloves and add the rice.

    Turn into a greased 1-quart casserole.

    Bake in a moderately hot oven at 375° for 30 minutes.
