- 1/3 c. vegetable oil
- 1 c. chopped onions
- 3/4 c. chopped green pepper
- 1 (No. 2 1/2) can tomatoes
- 2 1/2 c. water
- 1 Tbsp. salt
- 1/4 tsp. black pepper
- 1 small bay leaf
- 3/4 c. rice
Directions

1Heat oil in kettle.

2Add onions and green peppers; cook tender, but not brown.

3Add remaining ingredients, except rice. Bring to a boil.

4Add rice when mixture boils again.

5Cover and cook slowly over low heat, about 45 minutes or until rice is tender.

6Stir mixture occasionally.
