- 1 c. rice
- 1 c. chopped onion
- 1 large bell pepper, chopped
- 2 cloves garlic, chopped
- cilantro to taste
- 3 average size tomatoes (fresh or canned)
- 1/4 c. margarine
Directions

1Brown the rice with the margarine.

2When it is as brown as you like it, add the onion, bell pepper, garlic and cilantro.

3Also add salt and pepper to taste.

4Continue to stir until the onion becomes clear looking.

5Add the tomatoes; stir.

6Cover; let simmer until rice is done.

7You may want to add water, also.

8Just don't add too much; otherwise, you will lose the flavor and it will be flat. Continue to watch it so it does not scorch.
