- 1 Tbsp. olive oil
- 1 small onion, chopped
- 2 tsp. chopped fresh cilantro
- 2 c. rich beef broth
- 1 c. long grain rice
- 1 small clove garlic, minced
- 1/2 to 3/4 c. chopped tomato (fresh or canned)
Directions

1Heat olive oil in nonstick skillet.

2Add onion and cook over medium heat until soft.

3Add garlic.

4Cook 2 minutes longer.

5Add raw rice.

6Turn up heat and stir and cook until rice begins to become opaquely white and onion begins to brown.

7Add tomato and cilantro.

8Stir until combined with rice mixture.

9Add beef broth. Turn up heat and cook until broth comes to a boil.

10Cover.

11Turn heat down to simmer and cook for about 20 minutes until rice is done.
