Ingredients
- 2 to 3 Tbsp. olive oil
- 1 c. raw rice
- 1 small onion
- 2 stalks celery, chopped
- 2 Tbsp. bell pepper
- 1 tsp. salt
- 1 tsp. chili powder
- 1 pinch red powder
- 1 small can tomato paste
- 2 c. boiling water
- 1 small pod garlic, chopped
Directions

1Use a heavy skillet.

2Heat oil; add rice, cook and stir with a fork, until rice is light golden brown.

3Add chopped onions, celery, pepper and garlic.

4Stir and beat well.

5Add tomato sauce and seasoning.

6Stir well.

7When hot and bubbling, quickly add boiling water.

8Mix well.

9Transfer to preheated greased casserole and cover.

10Cook in a 350° oven for 1 hour.

11Do not stir again or rice will be sticky.

12When mixture is dry and fluffy, it is done.
