Ingredients
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 clove garlic, minced
- 1 Tbsp. cooking oil
- 1 (28 oz.) can tomatoes, cut up
- 3/4 c. long grain rice
- 1 tsp. sugar
- 1 tsp. chili powder
- 1/8 tsp. pepper
- several dashes bottled hot pepper sauce
- 1/2 c. shredded Cheddar cheese (optional)
Directions

1In a large skillet cook onion, green pepper and garlic in oil until tender but not brown.

2Stir in undrained tomatoes, rice, sugar, chili powder, pepper, hot pepper sauce and 1 cup water. Bring to boil; reduce heat.

3Cover and simmer for 20 to 25 minutes or until rice is tender and most liquid is absorbed.

4Sprinkle with shredded Cheddar cheese, if desired.

5Makes 6 to 8 servings.
