- 1 to 1 1/2 lb. ground beef
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 c. tomato juice
- 2 c. Minute rice
- 1 can pitted olives
- salt, pepper and garlic powder to taste

Directions

1Brown ground meat in large frying pan, breaking it up as it cooks.

2Drain fat.

3Add onion and bell pepper.

4Saute with meat until tender.

5Add tomato juice, salt, pepper and garlic powder. Add salsa in amount necessary to make spicy for your taste.

6Bring mixture to a boil.

7Add rice and olives.

8Stir, cover and remove from heat.

9Let stand, covered, at least five minutes before serving.
