Spanish Rice

Ingredients

  • 1 c. rice
  • 2 c. water
  • 3 slices bacon
  • 1 onion, chopped
  • 1/2 green pepper, chopped
  • 2 cloves garlic, minced
  • 1 lb. ground chuck
  • 2 (8 oz.) cans tomato sauce
  • 1 small can tomato paste
  • 1/2 tsp. paprika
  • 6 drops Tabasco sauce

Directions

    Cook rice with water according to package directions.

    Fry bacon in skillet until done.

    Remove bacon, drain and set aside. Brown onions, green pepper and garlic in bacon fat.

    Add ground chuck.

    Cook until done.

    Add tomato paste and sauce, then crumbled bacon and seasonings.

    Salt and pepper to taste.

    Add already cooked rice to meat mixture and mix well.

    Place in a greased casserole.

    Sprinkle Parmesan cheese on top.

    Bake in 350° oven for 40 minutes.
