Ingredients
- 1 Tbsp. bacon drippings or 2 Tbsp. Wesson oil
- 3/4 c. long grain white rice
- 1/2 c. chopped onion
- 1 garlic clove, minced
- 3 small canned tomatoes, chopped
- 2 Tbsp. tomato juice
- 2 c. hot water
- 1/2 tsp. salt
- 1/2 tsp. chili powder
- 1 tsp. paprika
Directions

1In a skillet heat bacon drippings or oil on medium-high heat. Add rice; cook and stir until rice is golden brown.

2Add onion and garlic; stir and cook 3 additional minutes.

3Add all remaining ingredients.

4Cook, uncovered, on medium heat for 20 minutes, stirring only once after 10 minutes.

5Check rice for doneness by tasting a few top grains.

6If rice is firm, add a little hot water and cook about 3 minutes more.

7Yields 6 servings.
