- 1 c. uncooked rice
- 1/4 c. canola oil
- 1 c. diced onion
- 1/2 c. diced green pepper
- 1 (14 1/2 oz.) can whole tomatoes
- 1 1/2 c. water
- 1 beef bouillon cube (optional)
- 1 tsp. chili powder
- 1/4 tsp. ground cumin
- 1/4 tsp. oregano
Directions

1Brown rice lightly in oil in a 10-inch skillet.

2Add onion and green pepper; saute until onion is transparent.

3Stir in remaining ingredients.

4Simmer, covered, 35 to 40 minutes until rice is done.
