Ingredients

  • 4 slices bacon
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 (14 oz.) can tomatoes
  • 1 1/4 c. water
  • 1/4 lb. uncooked pkg. precooked rice (1 1/4 c.)
  • 1/4 c. chili sauce
  • 3/4 tsp. salt
  • dash of pepper
  • 3/4 tsp. brown sugar
  • 1/2 tsp. Worcestershire sauce
  • 2 oz. shredded cheese (American or Cheddar; 2 c.)

    Cook bacon until crisp.

    Drain.

    Pour off all but 2 tablespoons bacon fat.

    In remaining fat, cook onion and green pepper until tender.

    Add remaining ingredients, except cheese. Pour mixture into baking dish.

    Cover and bake at 350° until rice is done, about 20 to 25 minutes.

    Crumble bacon; sprinkle each dish with half the bacon, then cheese.
