- 4 slices bacon
- 2 chopped onions
- 1 chopped red pepper
- 3/4 c. rice
- 2 c. canned tomatoes
- 1/2 c. water
- 1 tsp. salt
- 1 tsp. chili powder
- 1/4 tsp. pepper
Directions

1Dice bacon and cook until crisp.

2Remove from pan and cook onions and green pepper in pan.

3Add rice and saute for 5 minutes. Add tomatoes, water, salt, chili powder and pepper.

4Cover and simmer over low heat, approximately one hour.

5Add bacon and cook together.
