  • 2 Tbsp. vegetable oil
  • 1 small onion, chopped
  • 1 small green pepper, chopped
  • 1 stalk celery
  • 1 (16 oz.) can tomatoes

    Cover; cook gently about 25 minutes or until rice is tender.
