  • 1 1/2 c. white rice
  • 6 large tomatoes, peeled and cut into chunks
  • 2 very large green peppers, cut in wide strips
  • 2 large onions, coarsely cut into chunks
  • 1 to 4 cloves garlic, diced
  • 2 c. water
  • salt to taste

Directions

    In a large pot, bring rice and water to a simmer.

    Add remaining ingredients.

    Mix well.

    Simmer; stir often to prevent sticking.

    Add more water or tomato juice, if needed, while cooking.

    Cook 20 to 25 minutes or until rice, peppers and onions are tender.
