- 1 1/2 c. white rice
- 6 large tomatoes, peeled and cut into chunks
- 2 very large green peppers, cut in wide strips
- 2 large onions, coarsely cut into chunks
- 1 to 4 cloves garlic, diced
- 2 c. water
- salt to taste
Directions

1In a large pot, bring rice and water to a simmer.

2Add remaining ingredients.

3Mix well.

4Simmer; stir often to prevent sticking.

5Add more water or tomato juice, if needed, while cooking.

6Cook 20 to 25 minutes or until rice, peppers and onions are tender.
