- 1 cup rice
- 2 tablespoons oil
- 12 cup chopped onion
- 1 tablespoon minced garlic
- 12 teaspoon salt
- 2 large tomatoes, peeled and chopped
- 1 cup water
- 1 cup chicken broth
- 12 teaspoon cumin
- 13 cup frozen peas
- 13 cup diced cooked carrot
Directions

1Saute rice in hot oil until light brown.

2Add onion, garlic, and salt.

3Cook on low until onion is tender.

4Add tomatoes, cook until soft.

5Add water, cover and simmer until water is absorbed.

6Stir in broth, peas, carrots, and cumin.

7Cover and simmer until broth is absorbed and rice is tender; about 10 minutes.
