Spanish Rice

  • dash of lemon pepper
  • 2/3 c. raw rice (not instant)
  • 2 to 3 Tbsp. chopped onion
  • 1/2 grated bell pepper
  • 2 small cloves thinly sliced garlic
  • 1/4 tsp. ground comino
  • 1/2 tsp. chili powder
  • salt and pepper to taste
  • 2 tsp. chicken bouillon
  • 1 1/3 c. water

    In small iron skillet, slowly brown rice, onion and pepper in 2 tablespoons olive oil.

    Add spices, then add hot water with chicken bouillon dissolved in it.

    Cover.

    Cook on lowest heat for 15 minutes.

    This is very good with enchiladas and refried beans.
